RECIPE: Scan Bran Curly Wurly Cake

This cake is just 8 Syns if you use the Scan Bran as your HexB!

4 Scan Bran slices
2 eggs
Curly Wurly
Sachet of Options Hot Chocolate

1. Pour boiling hot water over the Scan Bran to soften, then mash and drain.
2. Beat the eggs, then stir into mix with Options and sweetener (add sweetener to taste)
3. Chop the Curly Wurly into small pieces and stir in
4. Pour the mixture into a microwavable bowl and cook for approximately 6 minutes. Be warned! The Curly Wurly will probably melt underneath and it will be sticky! When cooked the cake will pull away from the sides of the bowl.

For a few more Syns, I spread my cake with Nutella ;) it was absolutely gorgeous! My cake totalled 12 syns and I ended up eating it all the same day! Definitely going to make again, so quick and easy to make!

Once out of the Microwave. See the pieces of Curly Wurly that has melted!

RECIPE: Low Syn Jelly Mousse Dessert

Hartleys sugar free strawberry jelly sachet
Strawberry Mullerlight

1. Pour hot water over jelly crystals and stir until there are no lumps. Leave in the fridge to cool (but not set!)
2. Once cool, stir in Mullerlight
3. Pour into cups / bowls and leave in the fridge overnight to set.


The jelly is 1.5 syns for the sachet, so divided by four makes it hardly anything each! (I shared my mixture between four plastic cups).

You can't see the layers on mine as my cups are opaque.

So as I mentioned before, my boyfriend had a party for his birthday at the weekend and I (stupidly) decided to go crazy. I ended up stuffing my face with a burger, birthday cake, sausage rolls and drinking vodka. As I should have guessed, got weighed today and I've gained 3lbs! I'm now 3.5lbs from my 1 1/2 stone award! Gutting! But I have to show you the cake I bought him! How could anyone resist some of this gorgeousness!!??

Anyway, today I've been really good and decided to have a Green day. So far I've had Weetabix x2 with banana and blueberries and milk, Heinz spaghetti with mushrooms, and some Diet Coke Quorn Mince (a first for me as I usually make Diet Coke Chicken!). Oh and a Muller Light.

I'm off back to Leeds tomorrow so I will be making something with Scan Bran as it does seem to boost my losses, as well as making sure I eat plenty of fruits and veg to help speed up my losses. I am determined to lose this 3.5lbs! (Fingers crossed!). Anyway, I'll upload the recipes I promised you in the last post now.

Exciting news

So after my week of naughty foods, turns out I lost 2.5lbs!! Miracles do happen :) I also got Slimmer of the Week. Pretty pleased. 

I've been baking for the last few days. I made another scan bran cake this time with curly wurly! And I also made one of the jelly desserts from my slimming world book. (Will post both recipes later). 

It's my boyfriends birthday tomorrow and he's having a fancy dress party complete with bouncy castle. He's going as Perseus from Clash of the Titans and I'm going as a Greek lady. I think I mentioned this in an earlier post. Ill post the photos up soon!

Anyway this is only a quick one as I'm pretty busy getting organised for tomorrow. I'm now only half a pound off losing 1 and half stone!! Hope I get it!

This week has been a struggle

I've had my boyfriend over for the last few days. We went shopping to Poundstretcher, Aldi and Asda to do some food shopping (they are all on one complex near enough). Found two great deals that I just needed to share!

Space Raiders (3.5 syns): Poundstretcher 89p 10 bags
Marshmallow fluff (1 syn per tbsp): Aldi 79p


My boyfriend bought loads of sweets and crisps and biscuits. Over the last few days all he's done is munch on naughty foods and I've tried hard not to be tempted. The Marshmallow Fluff is gorgeous, and I've enjoyed just licking a spoon of it whenever I've had a craving. But I've had my full 15 syns almost every day now.

Oh, after Weigh In I was really naughty, as me and my boyfriend ordered from Pizza Hut. It wasn't even nice but I ate half of a BBQ chicken pizza, some cheesy garlic bread and some chicken strips. So I think this week I might have put on!

I got weighed earlier also (I know, bad Abbey!) and saw I'd gained 3lbs!! So now I need to be SUPER good and eat loads of superfree food. But I guess everyone has a slip!

Fingers crossed I pull off some sort of miracle! Good luck to everyone else this week, hope you've done better than I have!!

Weigh day again!

So I haven't blogged in quite a few days. If I'm totally honest, I've been putting it off! I've had a couple of days this past week where I've not really stuck to plan and gone over my syn allowance..

On Friday I ate the whole Scan Bran cake and was so full I didn't really eat any free or superfree foods.. and on Saturday I ate the whole of what was left of the Fererro Rochers.. and on Sunday I didn't do Slimming World at all! I volunteered at another charity gala and didn't take a packed lunch so ended up with a cheeseburger and a slush! When I got home I stuffed my face with crisps and Freddos and chocolate biscuits.

So basically, I have been dreading Weigh In this week.. however..

I've lost 2lbs!! It must have been all that Scan Bran ;) haha. I do think that I will put something on next week though, it will probably catch up with me then!

I've been really good today. I've had Weetabix with banana and blueberry, a muller light, and McCain jacket potatoes with baked beans! The McCain spuds are gorgeous, only 1 syn each! I had 2 :P

I'm off to a pub quiz tonight. All my friends get chip butties there because theyre only £1 while the quiz is on so I'm going to have to fill up on superfree foods before I go! And drink plenty of Diet Coke to keep me full haha. Fingers crossed we win!! We never do :( haha..

Ooh also, all my clothes are size 22/24 with the exception of a few 18s and 20s. My boyfriend is having a fancy dress party for his birthday, and he's going as Perseus from Clash of the Titans.. so we decided that I will go as a  greek goddess type thing.. I ordered an outfit from the internet size 22/24 as fancy dress is usually tight fitting. It arrived yesterday and lo and behold it is farrrrrr too big!! Quite pleased. My sister is going to alter it slightly but I'm going to keep it because their dresses are usually quite baggy anyway. But thought I'd share that with you as I'm really pleased!

I've now lost 18lbs, getting closer to target every time!

RECIPE: Chocolate Scan Bran Cake and Ferrero Rocher

I decided to bake to make myself useful! So I ended up making a batch of Ferrero Rocher and a Scan Bran Cake. Quite pleased with both, but mainly the Rochers!!

The Scan Bran Cake was 6 syns (not including hexb), or 10 syns if you want a Nutella topping.

The Ferrero Rochers were 1 syn each!

Chocolate Scan Bran Cake

5 Scan Bran slices
1 oz sweetener
1 oz cocoa
3 eggs
1 tbsp golden syrup
(Nutella if you want a topping)

1. Pour just enough hot water over the Scan Bran until they start to melt, add golden syrup and then mix together and allow to cool.
2. Mix in the rest of the ingredients
3. Microwave on full power for 5 minutes

When it had cooled I spread a tbsp of Nutella over the top, just because I wanted a bit more of a chocolatey taste.

Ferrero Rocher

8 Ryvita slices (or Scan Bran)
4 tbsp Nutella
2 tbsp golden syrup

1. Melt together the Nutella and golden syrup.
2. Reduce Ryvita / Scan Bran to crumbs (either using a food processor or put in a sandwich bag and crumble)
3. Mix everything together
4. Mould into small balls and refridgerate to cool

The whole mixture is 23 syns so I made 23 balls = 1 syn each :)

The Ferrero Rocher is beautiful! Theyre chocolatey and crunchy and you can pretend that its nuts ;)

RECIPE: Syn Free Lemon Curd!

So today's recipe is for a syn free lemon curd! It tastes gorgeous and is thick and creamy. It doesn't look so much like how I thought lemon curd looked, but it tastes just as good. I love everything lemon-y so I'm going to make this more often! It can be used as a filling for cake or a topping for toast, but I could just spoon it straight out of tub and eat it! Anyway, here it is :)

Syn Free Lemon Curd

2 large eggs
1 lemon - juice and rind
2 tbsp Quark
3 tbsp sweetner

1. Whisk eggs in a large bowl with lemon juice
2. Add rind and sweetener
3. Place over a pan of simmering water and whisk until it starts to thicken
4. Remove from heat and add Quark. Whisk until smooth
5. Allow to cool, and keep in a jar / sealed container in fridge

I know I've already said but it tastes so nice! You can add more sweetner / lemon juice depending on how you want it to taste! Enjoy!! :))

Today I don't feel like doing anything!

As the title suggests, today I am having a lazy day!! Woke up late, made myself a fry up with a twist ;) and now I'm just lounged on my bed, surfing the internet for nothing in particular haha.

Instead of toast with my fry up this morning, I had a toastie!! With cheese! Instead of putting butter on the outside I used Fry Light and it worked just fine :))

It was beautiful :)

I've been spending a bit of time over the last few days trying to find other students doing Slimming World but it's proving difficult! Where are you all!? 

Oh and last night I couldnt sleep so I made some Syn Free Lemon Curd :)) I'll post the recipe on the next post, it tastes lush but I think I put a bit too much lemon juice in!

Hope everyone is still enjoying this sunshine! I'm gonna go sunbathe with my housemates I think :)) Everyone else in this house is sooo skinny so I guess it's extra motivation!! :)

Weigh in day

This morning I woke up and made myself a HUGE Slimming World fry up, ate every last piece, then remembered today was weigh in day.. Oops! Usually on weigh in day I'll have something small for breakfast like fruit and yogurt, but I totally forgot! 

Anyway, I didn't eat anything else until after weigh in. At 5PM me and my mum walked down to the club to check the damage.. And I was 2lbs lighter!! Was super happy! But can't help feeling like I would have lost more had I not had such a large breakfast haha. My mum lost 3lbs so she was happy too :)

When we came back home I made me and my dad some pasta loaded up with passata, courgettes, peppers, mushrooms and chicken. I enjoyed it but my dad said it wasn't spicy enough for him (he likes spicy foods!). For dessert I've just had a vanilla muller light with some Options hot chocolate mixed in (2 syns). Beautiful! 

I keep forgetting to take photos of my meals so next time I WILL remember to post photos! Good luck to everyone else at weigh in this week! :)

RECIPE: Super Quorn / Beef Chilli

So, for my tea I've just made a Quorn Chilli which was completely FREE on Slimming World! It's one of my favourite recipes to make as it is 100% free, is quick and easy to prepare, and tastes amaaaazing!

I forgot to take a photo (oops) so I've just found an image on Google of what it should look like! I've written out my recipe which I've created for it, but don't worry, you can tweak and change it depending on how you like yours!

Quorn / Beef Chilli

1 400g tin of chopped tomatoes
1 415g tin of baked beans
Selection of veg (e.g. mushrooms, onions, peppers, carrots etc)
Garlic (crushed clove or powder / paste)
Mixed herbs
Extra lean beef mince OR Quorn mince

1. Rinse and chop veg
(If using beef mince then cook now)
2. Add tin of chopped tomatoes and baked beans to a large pan
3. Turn to high heat until begins bubbling then turn low to simmer
4. Add chopped veg, garlic, paprika, chilli and mixed herbs
5. Allow to simmer for 10 minutes
6. Add mince. Allow to simmer until it thickens to what you like (usually between 5 and 10 minutes)

Serve with rice, pasta, jacket potatoes, SW chips.. anything! :) Enjoy!

Hi! My name is Abbey, I'm 21 and a student living in Leeds. I'm following Slimming World and have so far lost 1 stone! I've been going for 8 weeks and am really happy with my weight losses so far!

This blog is really to document my progress, keep myself (and others!) motivated as well as provide support to other students and slimmers who are finding dieting challenging because of budgeting. When living away from home, I always find managing my money pretty difficult, even without buying 'special dieting foods' every week. Fruit is so expensive!! It's so tempting when you're walking around Asda to spend £1 on sweet treats or multipack of crisps instead of like £2 on apples!

Anyway, welcome to my blog! I am hoping to be posting food diaries, weight losses, recipes and just general ponderings of my mind haha, so please bear with me, this is a blog in progress! And feel free to comment on posts sharing your thoughts and help if you so wish :)
